Dinner last night was one of our favorites: bluefish covered in buttery toasted almonds, and a crunchy green salad with homemade blue cheese dressing.
We have these great little iron skillets we bought in Chinatown - they’re perfect for fish. Here’s the delectable fait accompli: toasted almonds blanketing the rich meaty bluefish, with a squeeze of lemon over the whole thing.
And of course he makes all our salad dressings from scratch. This one is full of chunks of gorgonzola. His salad had crumbles of bacon he’s been eating for his Atkins diet.
The contrast between the soft warm fish, the crunchy buttery almonds, and the crisp cold salad with that creamy and sharp dressing….this is a wonderful dinner.
